MANGALOREAN TOMATO SAAR

When not in a mood to cook something elaborate, I fall back on my simple,tried, tested & tasty tomato saar. It taste best with piping hot rice and fried fish or chicken sukka. Tomato saar is my daughter's favourite...she pours the hot tomato saar over her rice plate till the rice is swimming in the saar along with her ever favourite cauliflower fry. You may enjoy this delicious saar either plain or spice it up with your favourite rasam powder.

Ingredients :

1/2 Kg perfectly ripe soft tomatoes
1 medium onion chopped
2 crushed garlic cloves
3-4 green chillies broken
1 sprig curry leaves
1/2 tsp red chilli pd.
1/4 tsp turmeric pd.
salt to taste
Handful of coriander leaves

For seasoning :

1 tblsp oil
1/4 tsp mustard seeds
pinch of asafoetida 

Method :

1. Heat oil in a heavy bottomed vessel. Fry the curry leaves till crisp and set aside.
2. Now in the same oil add mustard seeds, asafoetida, crushed garlic, chopped onion & green chillies.
 Saute till onions are light brown.
3. Add in the roughly chopped tomatoes, turmeric pd, red chilli pd. and stir. Allow the tomatoes to cook  on medium flame till they are soft and cooked well.
4. When cooked mash the tomatoes with the help of a spoon or a hand blender.
5. Add in 3-4 cups of water and salt to taste. Give it a boil.
6. Sprinkle chopped coriander leaves and fried curry leaves.
7. Serve hot with rice and my prawns sukka or clams sukka.
