I sometimes feel that in our busy lifestyle, our traditional delicacies are slowly fading away. Only my elders know about it and my younger generation just do not care for it any more. May be because now my kids need quick and easy recipes that suit to their present lifestyle. In my this recipe, mutton is cooked in a blend of spices and coconut .. finally garnished with fresh coriander leaves, ideal to be served with simple tomato saar and rice or goes well with my neer dosa, set dosa or idiyappam. My hubby is a big mutton lover & this dish adds sparkle to his Sunday meal.
Ingredients :
1 kg mutton on the bone
2 medium potatoes cut into four
2 medium tomatoes
3 medium sliced onions
6-7 cloves of garlic
2 green chillies
1 inch piece ginger
1 tsp turmeric pd.
1 tblsp Bafat mutton masala or any mutton masala
small piece of tamarind
handful of fresh coriander leaves
5-6 sprigs of fresh mint leaves
1 lime
2 tblsp oil
for Masala :
11-12 bedagi dry red chillies
1 tblsp poppy seeds
1/2 inch piece cinnamon
1/4 tsp fennel seeds
3-4 cloves
6-7 black pepper corns
4-5 fenugreek seeds
1 black cardamom seeds
1 tsp cumin seeds
1/2 tsp mustard seeds
1 tblsp coriander seeds
1 cup grated coconut
1/2 cup water
Method :
1. Heat little oil in a kadai, saute the bedagi chillies and all spices in turns for few seconds. keep aside.
2. Next in the same kadai saute 2 sliced onions, ginger,garlic,green chillies for a minute.
3. Grind the roasted spices to fine pd. then add the fried onions, ginger, garlic,chillies,grated coconut, tamarind and water and grind to a smooth paste.
4. Heat a tblsp of oil in a pressure cooker. Add 1/4 tsp mustard seeds and one sliced onion. Saute till the onions change the colour.
5. Add in the chopped tomatoes. When tomatoes are soft add the mutton pieces, turmeric & saute till the mutton gives out some juices.
6. Add the potatoes, ground masala paste, lime juice, chopped coriander and mint leaves.
7. Stir till masala covers the mutton pieces. Add 1 1/2 cup water, salt & mutton masala.
8. Bring to a boil, close the pressure cooker lid & cook for 3-4 whistles. Reduce flame and cook more for 10-15 minutes on slow flame.
9. Garnish with coriander leaves.
10.Serve hot with my neer dosa, Set dosa or idiyappam.
