One of the important nutrients for our body is proteins, and urad dal is richest source of proteins and vitamin b. Urad dal is also beneficial for women. It contains magnesium, potassium, calcium which is very essential for women’s healthy pulse. Apart from these it is also good for diabetes. Medu vada is the third most popular breakfast item and star of south Indian menu, in India after idli and dosa. It is the star of south Indian menu. Medu vada is a fritter, resembling doughnuts, which is crispier outside and soft inside. Medu Vada is an important part of a south indian lunch menu in weddings, festivals, puja meals and many such occasion.
Ingredients
1 1/2 cup Urad dal
1 inch piece (grated) Ginger
5-6 (finely chopped) Green Chillies
1/2 tsp Crushed Black Pepper
a pinch of Asafoetida
1/4 tsp baking soda
1 sprig Curry leaves
Oil for deep frying
Salt to taste
little water for grinding
handful coriander leaves chopped
Method :
1. Clean and soak the urad dal for atleast 4 -5 hours.
2. Grind the soaked dal to a smooth batter with very little water.. only if required. As too much watery batter will make the vada oily.
3. Add the spices, herbs and salt. mix well.
4. Take a bowl of water. Dip your hand in water. Take some batter in your right hand, flatten a little & give it a round shape. With your thumb make a hole in the center. You can use a soft wet muslin cloth or plastic sheet to make the vada.
5. Deep fry the vadas to golden colour and drain it in a paper towel.
6. Serve hot with coconut chutney and sambar.
