Goli Baje/ Mangalore bonda is an amazingly awesome deep fried snack which is popular in Udupi & Mangalore almost from a roadside stall to any three or four star restaurant. Apparently in many restaurants in Mumbai it is known as the S.K. (south kanara) Pakoda. Its my favourite snack since childhood and I promise you that after tasting it you will agree with me. I am a foodie so as a kid would request mom to make golibaje ... but at times the batter would be too thin/loose and she wouldn't get the round shape, but still they tasted fabulous. They would acquire differnt shapes..shapes of animals. My brother and me would then decide who would get the elephant,duck, giraffe etc. Golibaje is crispy outside, soft inside and a perfect snack for a cold winter evening as today. These soft light & fluffy fritters are best when served hot with coconut chutney.
Ingredients :
2 cups All purpose flour/ Maida
2 tblsp rice flour
2 tblsp gram flour/besan
3/4 cup thick curd
1 tsp cumin seeds (Jeera)
3 tsp sugar
1 sprig curry leaves torn into half
4-5 green chillies chopped fine
1 inch piece ginger chopped fine
few coriander leaves chopped fine
1/2 tsp baking soda
salt to taste
oil for deep frying
Method :
1. In a mixing bowl take maida, rice flour, gram flour and all the spices and herbs & mix well.
2. Now add curd, sugar, salt and mix ... a thick & sticky dough would be ready.
3. Later add little by little spoons of water to the dough, so that the consistency of the dough is neither too loose nor too stiff. Keep aside & Let it ferment for 3-4 hours.
4. Before making the baji add the baking soda and mix the batter thoroughly.
5. Heat oil in a kadai. Scoop out small ball sized batter using fingers and carefully drop it in the oil.
6. Fry the fritters on medium flame until they become nice golden brown in colour. Keep turning the fritters frequently while frying, so that they get fried evenly.
7. Serve hot with coconut chutney - 1 cup coconut grated, 3-4 green chillies, small piece tamarind, salt, little water. Grind all to a paste.
So here's my favourite evening tea time snack...Golibaje in all its glory to relish on a rainy or winter evening.
