Noodles have been a staple food in many parts of the world atleast for 2000 years. The earliest record of noodles appears during China's East Han Dynasty. Some theories suggest that noodles were first made in Middle East & introduced to Italy by Arabs. The word noodle derives from the German word 'Nudel'.
Both the Italians & Chinese lay claim to inventing the Noodle. But in my home it was introduced through Nestle (Maggi) which is my daughter's favourite since her childhood. Even today she prefers having Chinese cuisine over any other cuisine. It’s one dish, that never fails to put a twinkle in my daughter’s eye.
This recipe is an Indo-Chinese preparation by tossing cooked noodles & stir fried vegetables in Chinese sauces. I do believe that indo – chinese cuisine is one of the most brilliant discovery and am sure the entire nation admits with me.
Ingriedients:
2 packets (150 gms each) Plain noodles
2-3 Green chillies slited
2 tblsp ginger garlic (minced)
5-6 finely chopped spring onions & greens
2 thinly sliced Capsicum
1/4 kg shredded or thinly sliced Cabbage
Few french beans julienned
2-3 carrots julienned
1 tsp black peppercorn powder
1 tsp white vinegar
2 tblsp soya sauce
1 tblsp chilli sauce
1 tblsp tomato ketchup
3 tblsp oil
salt to taste
Method :
1. Boil 2 litres water in a large vessel & let it boil.
2. Drop the noodles, 1 tblsp oil & 1 tsp salt..boil for 2 minutes, where it is partially cooked.
3. Drain the noodles & wash under running water & keep aside.
4. Heat 3 tblsp oil in a wok, add slited green chillies & ginger and garlic minced..stir fry till slightly brown.
5. Now stir fry the vegetables until they are crunchy.
6. Add vinegar, chilli sauce, soya sauce, tomato ketchup, pepper powder, salt & lastly the cooked noodles.
7. Mix and toss until noodles are evenly coated with the vegetables and sauces. Lastly garnish with spring onion greens
8. Serve piping hot with chilli chicken / paneer or veg / Gobi manchurian. I am sure it’s a must to relish in every household as kids and adults love it in equal measure!
