DELICIOUS & QUICK ONE POT VEGETABLE BIRYANI

I am sharing with you this simple and quick aromatic and delicious vegetable biryani prepared in a pressure cooker. This biryani has the flavors of biryani and it taste awesome. You do not have to pre cook the rice or veggies and yet get a distinct flavourful biryani. It is an easy and ideal meal for lunch and dinner which will give you the flavour of restaurant style hyderabadi dum biryani. This vegetable biryani in cooker is good for lunch boxes & it tastes awesome with my bhindi ka salan recipe. The end result of this recipe says maximum taste with minimum work.

Ingredients :

1 cup Basmati Rice
1/4 cup cauliflower florets
1/4 cup green peas
Few panner cubes
1 Carrot diced
1/2 cup french beans diced
1 Potato diced
1 big onion sliced and fried brown
1 big onion sliced
1 bay leaf
1 tsp cumin seeds
3 medium Tomatoes chopped
2 tblsp ginger garlic paste
handful coriander leaves and mint leaves
1 tsp Red chilli powder
1 tblsp Coriander Powder
1/2 tsp turmeric powder
2 tblsp Ghee
Salt to taste
ghee roasted cashewnuts

Garam masala for biryani

1 tsp pepper corns
2 Cloves
3 green Cardamom
1 inch Cinnamon
1 tsp Fennel seeds
1 Star anise

Method :

1. Wash the vegetables and chop to desired shapes. Dry roast the garam masala spices and grind to a fine powder.
2. Heat ghee in the pressure cooker over medium heat .. add bay leaf and cumin seeds. When cumin splutter add the sliced onion and saute till golden .. now add ginger garlic paste and saute till the raw smell disappears.
3. Now add the chopped tomatoes and cook till soft. Add the freshly ground biryani masala and other masala powders.
4. Add the vegetables and panner pieces and saute for a few minutes till well mixed. Finally add the basmati rice, coriander mint leaves, fried onions, roasted cashewnuts and salt.
5. Add 2 cups of water (ratio of rice and water 1:2). Pressure cook the vegetable biryani for 2 whistles.
6. Your one pot vegetable biryani is ready to be served.
7. Serve this delicious biryani hot with onion tomato raita and my bhindi ka salan.
