INDIAN FRIED BANANA DOUGHNUT / MANGALORE BUNS

Apart from the breakfast staple of dosas and idlis, the Mangalore buns is the most popular item in the region. Mangalore Buns is a popular breakfast or snack in the Udupi-Mangalore region of Karnataka. These buns are mild sweet, soft fluffy earthy doughnuts made using all purpose flour and banana. These buns are also called as banana buns or pooris. Typically served with a spicy coconut chutney and sambar, but they also taste delicious without any accompaniment.
The vegetarian chefs from Udupi were the brains behind the delicacy. It is believed to have been created by a group of cooks in the kitchens of Udipi many years ago. It is said that the buns was a result of making an attempt to dispose a lot of ripe bananas, which was added to flour and resulted in the Mangalore Buns. The makers loved it and soon it became popular in Udupi and Mangalore.

Ingredients :

2 well ripened bananas
3 cups all purpose flour/maida
1 tsp cumin seeds
3-4 tblsp curd preferably slightly sour
3-4 tblsp sugar
1 tsp salt
½ tsp baking soda
Oil for deep frying

Method :

1. In a large mixing bowl take 2 ripened banana. If they are over ripened .. it works great.
2. Add in sugar and mash well using hand until the mixture is smooth.
3. Now add curd, cumin seeds, baking soda and salt.
4. combine well .. further add maida and prepare dough. Knead for 5 minutes or till dough turns smooth...
grease the dough with a tsp of oil.
5. Cover and rest in warm place to ferment (overnight)
6. Next day, knead the dough slightly and if sticky dust some maida accordingly.. roll slightly thick pooris...then deep fry them in hot oil on medium flame.
7. Fry the pooris till they are puffed and golden in colour.
8. Serve hot with coconut chutney and a cup of hot tea / coffee.
