Masala Dosa is a thin and crispy variation of the popular south Indian crepe, which has its origins in tuluva Mangalorean cuisine...made popular by the Udupi hotels. It is made from rice & dal batter and has earned India its place on global cuisine map. Masala Dosa contains a spicy and aromatic stuffing made with boiled and mashed potato, onion & spices.
Potato masala stuffed idli is a delicious and perfect snack recipe as these spicy potato stuffing will surely take the plain idlis to another level.
It is a common breakfast dish, and street food. Idli and dosa is rich in carbohydrates, contains no salt, sugar or saturated fats and its constituent ingredients of rice and lentils mean that it is glutton-free and contains protein.The fermentation process increases the vitamin B and vitamin C content.
My proportion for Idli and Dosa Batter is : 1 1/2 cup raw rice, 1 cup parboiled rice (ukda chawal), 1/2 cup urad dal, salt to taste. Wash & soak the rice and dal in two separate containers for 4-5 hours. Grind to a paste... first grind dal then rice and keep for fermenting overnight.
Ingredients for Stuffing Masala :
4 medium size potatoes boiled and mashed
2-3 medium onion sliced
2 tomatoes sliced
1/2 tsp mustard seeds
1/2 tsp urad dal
1 sprig curry leaves
1/2 tsp turmeric pd.
handful coriander leaves
2 tsp oil/ ghee
salt to taste
Method :
1. Heat ghee/oil in a kadai add mustard seeds and urad dal and let it splutter. Now add the sliced onions, curry leaves, green chilies.
2. Saute the onions till they soften and turn slightly golden. Add the sliced tomatoes. Cook till the tomatoes turn soft.
3. Add salt and turmeric powder and mix well. let simmer for 2-3 minutes.
4. Now add the boiled & mashed potatoes and mix very well.
5. Check the seasoning and simmer on a low flame for 3 to 4 minutes stirring occasionally.
6. Switch off the flame and then add chopped coriander leaves. keep aside.
7. For stuffed idli make small patty from this mixture.
For stuffed Idlis :
1. Let water simmer in the idli steamer. Grease each mould with little oil.
2. Now pour about one tblsp of the idli batter into each mould..place the patty over it and pour some more batter over the stuffing and cover it.
3. Place them inside the idli steamer and steam cook for 10-12 minutes on high flame.
4. Demould using a spoon when little cool. Your stuffed masala idlis are ready to be served.
5. Serve with coconut chutney and sambar.
For Masala Dosa :
1. For Dosa you have to add little water to the batter to make the consistency little thin.
2. Heat a non-stick frying pan .. pour a ladelful of the batter on the pan and spread it in a circular motion..later smear little oil on top and edges.
3. Cover and cook the dosa till the base turns golden brown and crisp.
4. Spread the stuffing on one half of the dosa and fold.
5. Serve hot with coconut chutney and sambar.
