SAVOURY SEMOLINA PANCAKE / MANGALOREAN RAVA ROTTI

Rava rotti is an all time favourite at my home. Its an instant dish which doesn't call for any pre-planning...as soaking and fermenting is not required. They are yummy and can be made more healthy by adding grated cucumber, carrot, capsicum or any vegetable of your choice. With coriander leaves you can also add dill/ shepu leaves to enhance the flavour.
Rava rotti is a very popular breakfast dish in Mangalore. Soft yet crisp these pancakes are very filling.


Ingredients :

2 cups Semolina/ Rava
1/2 cup wheat flour / rice flour
1 big Onion finely chopped
1 cucumber grated (optional)
1 Carrot grated (optional)
1 capsicum finely chopped (optional)
1/4 cup curd
1/2 cup grated coconut
4-5 Green Chilli finely chopped
1 inch Ginger finely chopped
2 tsp sugar
salt to taste
1 sprig curry leaves
handful Coriander leaves
Butter/oil for frying

Method :

1. In a large mixing bowl take 1 cup of water, add sugar and salt and mix well till sugar is dissolved.
2. Add all the ingredients except butter/oil and mix well to form a soft dough.
3. Cover and set aside for 10-15 minutes.
4. Place one portion of the dough on a greased plastic sheet or aluminium foil and pat lightly and spread with your wet fingers. Invert this rotti on to your nonstick frying pan.
5. Drizzel a few drops of oil/butter along the edges and roast over medium flame. Cover with lid & Let them cook till they turn golden brown.
6. There's another method where instead of making a dough you may add little more water and make it into a thick batter.
7. You may pour this directly on the frying pan with the help of a ladel and fry till crisp and golden.
8. Some times instead of big size rava rottis my kids prefer small mini rava rottis.
9. Rava rottis are ready to be served with coconut chutney or tomato sauce. We prefer it along with dahi.
