SEMOLINA/ SOOJI VEG UPMA ( MANGALOREAN STYLE VEGETABLE RAVA UPMA)

Mangalorean vegetable upma recipe is a common & all time favourite breakfast recipe not only in many south indian households but is enjoyed all over India and across the world too. This savoury recipe is very simple and hardly takes more than 15-20 minutes....is basically made of semolina cooked with a traditional tempering of onion,chillies,curry leaves,mustard seeds,urad dal,cashewnut along with fresh veggies and garnished with fresh coconut and coriander leaves which definitely makes it a healthy breakfast that is really tasty too. It's an absolutely fuss free dish! You can serve it with coconut chutney, sambhar or curd  to make it more enjoyable.
Actually speaking Sooji Upma was never my favourite during my growing years...but now after having my own kids I do understand the importance of a healthy & wholesome breakfast. This is my version of making the dish adapted from my mom's recipes.

Ingredients :

2 cups Semolina/Sooji/ Rava
1 big Onion finely chopped
3-4 Green Chillies chopped
1 cup fresh green peas or
1/2 cup each of peas,carrot,french beans,capsicum etc.
1 tsp Mustard seeds
1 tsp White Urad Dal
1 sprig Curry leaves
3 tblsp coconut/any Cooking oil
5-6 cashewnuts broken
2-3 tsp sugar
Salt to taste
1-2 tablespoon Fresh coconut grated
handful Coriander leaves finely chopped
4 1/2 cups of water

Method :

1. Chop onion & green chillies. In a vessel keep 4 1/2 cups of water to boil.
2. Heat oil in a non stick Kadai ... add mustard seeds, urad dal, cashewnuts & curry leaves  and sauté for a minute.
3. Add onion, green chillies and sauté till slightly golden in colour. Add semolina and sauté for 4-5 minutes.
4. Now you can add in the peas and other vegetables of your choice. Here I have used only peas. Mix well.
5. Reduce the flame and add in the salt, sugar & boiling water. Cover and cook till water is absorbed completely.
6. Finally garnish with fresh grated coconut and coriander leaves and serve hot.

Serve the mangalorean style Sooji Upma With coconut chutney, sambar or curd.
