India is a land of diversities, which is well portrayed in its culture and cuisine. Malvani cuisine is the standard cuisine of the South Konkan region of Maharashtra and Goa, and some northern parts of West Karnataka.The Malvani masala, a form of dried powder masala is a concoction of 15 to 16 dry spices. This masala is coarsely grounded and stored in jars to be utilized when required. Some dishes also use kokum, dried kokam (amsul), tamarind, and raw mango (kairi).The Malvani cuisine is very similar to Goan or coastal South Indian cuisine. Malvani Style Chicken Curry is a flavourful and rustic chicken gravy where chicken is cooked with authentic Indian spices with loads of flavour. Malvani chicken curry is an amazing dish which is perfectly appropriate for any occasion.
Ingredients :
500 gms Chicken (Use desi breed chicken)
1/4 tsp turmeric pd.
1 tsp garam masala pd.
2 tsp Malvani Masala pd.
2 tblsp ginger garlic and green chillies (minced)
2 tblsp browned dry coconut powder
2 tblsp oil for cooking
For Masala for gravy :
1 onion sliced
4-5 dry red chillies
2 tsp coriander seeds
1/2 tsp shahi jeera
3-4 cloves
1 inch cinnamon
1 tsp black pepper corns
1 star anise
2 green cardamom
1 big black cardamom
1 tsp poppy seeds
1 tsp fennel seeds
2 tblsp coconut grated
2 tblsp oil
Method :
1. Heat oil in a pan and add the whole spices and dry red chillies and saute for 2-3 minutes. Now add chopped onions. Cook this on a slow flame till the onions change colour.
2. Add grated coconut and saute. Transfer all into a blender and grind to a smooth paste and keep aside.
3. Heat oil in a kadai pan add the minced garlic, ginger, green chillies and saute till the raw flavours disappears.
4. Now add the Malvani masala, turmeric and garam masala powder. Cook this masala on a slow flame and then add the ground masala paste and saute.
5. Add chicken pieces and mix well until the chicken pieces are nicely coated with the masala.
6. Add salt and a cup of hot water, mix and cover the pan with a firm lid. Cook this for 15-20 minutes on a slow flame stirring occasionally.
7. If you require thin gravy you can add little hot water accordingly. Continue cooking on medium flame till the chicken gets tender. When the chicken is almost done, sprinkle browned finely powdered kopra (dry coconut). Mix well.
8. Finally garnish with freshly chopped coriander leaves and serve hot with steamed rice, roti, bakhri or maharashtrian vade.
9. Serve onion, lime as accompniment and solkadhi which is often drunk after having spicy malvani meal as it is very soothing.
