Sev tamatar sabzi is a traditional Gujarati dish with a delicious tomato gravy topped with some crispy sev! Sev Tamatar Sabzi is made using juicy tomatoes which is sauteed with desi masalas and served with heaps of chickpea sev. As much as this sabzi is popular in Gujarat, it is equally popular in Rajasthan as well. This recipe can be made quickly without much effort .. and I promise you are surely going to love it...without any doubt!
Ingredients :
3 medium red ripe tomatoes chopped
2 medium onion chopped
2 tsp ginger garlic paste
3 tblsp oil
1 tsp cumin seeds
1/4 tsp asafoetida
1/2 tsp mustard seeds
4-5 green chillies chopped
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp coriander powder
salt to taste
1 cup thick variety Besan sev
1 tsp lime juice
handful coriander leaves chopped
1 cup water
Method :
1. Heat oil in a kadai..add mustard seeds, cumin seeds and asafoetida.
2. When they splutter add onion and saute till they turn light brown. Add ginger garlic paste and saute for a while.
3. Now add the chopped tomatoes and cook till they turn soft. Add in all the spice powders and salt and cook on medium flame.
4. Later add water, close with lid and let cook for 4-5 minutes.
5. Let it cook for more 5-6 minutes or till it reaches the desired consistency.
6. Lastly add lime juice and coriander leaves. Give it a mix.
7. Switch off the flame and transfer the sev tamatar sabzi into the serving bowl and garnish with generous amount of sev. Serve immediately ... as the sev gets soggy.
8. Serve hot with phulka and masala chaas.
