These quick n easy but very succulent Chicken Kalmi Kebab are an authentication of the rich and indulgent Mughal cuisine. The roasted spices render them a depth of flavour and distinctive aroma that words cannot describe. Kalmi kebab is particularly popular in India’s capital city, Delhi .. made by marinating chicken drumsticks and roasting them in tandoor. Spices, yoghurt and mint form part of the ingredients. Kalmi kababs are typically made with chicken drumsticks, but you can try using the same recipe with lamb chops. This low fat recipe is ideal for weight watchers.
Ingredients :
4 chicken drumsticks
1 tblsp oil
First marinade :
2 tsp red chilli powder
1/2 tsp turmeric powder
1 whole lemon for juice
salt to taste
Second marinade :
1 tsp Caraway seeds/ Shahjeera
1 tsp coriander seeds
2-3 cloves
1/2 inch piece cinnamon
5-6 whole pepper corns
1 masala cardamom
1 green cardamom
1 tblsp dalia (roasted gram)
8-10 almonds
2 tsp ginger garlic paste
2 tblsp curd
Method :
1. Wash clean the chicken... then poke the drumsticks all over with a fork. Marinate them with the first marinate and keep for half an hour.
2. Roast all the dry spices on a skillet along with almonds & dalia. Transfer it to the blender along with curd, ginger garlic paste and grind to a thick smooth paste.
3. Marinate the drumsticks in this paste for 3-4 hours or more.
4. Heat a non stick kadai with 1 tblsp oil and palce the marinated chicken drumsticks on it and let it cook on medium flame for 25-30 minutes or till all the sides are golden in colour.
5. You can also cook them in an preheated oven or grill them till nicely charred.
6. These Kalmi kebabs are really very scrumptious and juicy and the meat almost melts in your mouth.
