Shahi Paneer is a delicious, delicately flavoured, creamy, aromatic gravy made with soft cottage cheese cubes. The creaminess comes from onions, nuts and milk cream. This is one of the royal cottage cheese recipe. Dry fruits, saffron, whole spices and cream is added to bring in the royal, rich texture and flavour. Garnish your dish with chopped coriander leaves and grated paneer. If you like it creamy you can add some fresh cream this will not only make your dish look scrumptious, but at the same time it will add on to the taste. Shahi Paneer can be served with butter naan, roomali / tandoori roti, paratha, kulcha or any Indian bread. It also tastes good when served with steamed rice or pulao. It does come with its share of calories, but one bite and you will realize it is all worth it.
Ingredients :
200 gms Paneer cubes
1 big onion chopped
2-3 green chillies
3-4 flakes of garlic
1/2 inch piece ginger
few whole spices ( cinnamon, cloves, cardamom )
2 medium size tomatoes chopped
5-6 cashewnuts soaked in warm water
5-6 almonds soaked in warm water
1 Bay leaf / tej patta
1/2 tsp shahi jeera
1 tsp kashmiri red chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp pepper powder
1/2 tsp garam masala powder
few starnds of saffron soaked in warm milk
few drops kewra/ rose water (optional)
4 tblsp milk cream
pinch of green cardamom powder
handful of coriander leaves chopped
salt to taste
2-3 tblsp butter/ ghee / oil
Method :
1. Soak the Cashewnuts, Almonds in warm water for 10-20 minutes. When cool peel off almond skin and grind both to a smooth paste.
2. In a vessel take the chopped onion, green chillies, garlic, ginger, whole spices with 1 cup water and cook for 15-20 minutes. When cool blend to a smooth paste.
3. Grind the chopped tomatoes to a smooth puree and keep aside.
4. Melt the butter in a kadai. Add bay leaf and shahi jeera...Later add the onion paste and cook on slow flame till you get a nice aroma.
5. Add the tomato puree and cook till oil separates from the gravy. Keep stirring in between.
6. Now add all the powdered spices and cook for 2-3 minutes.
7. Now you can add the cashew - almond paste. Keep stirring ... add 1 cup water and combine well.
8. Add milk cream, saffron milk, kewra/rose water and give a stir.
9. Now add in the paneer cubes and let simmer for 4-5 minutes more.
10.Sprinkle cardamom pd. & garnish with coriander leaves and grated paneer and serve hot with any roti or any flavoured rice.
