Every part of watermelon is edible, even the seeds and rinds. Watermelon is grown in over 96 countries worldwide. Watermelon is a vegetable... it is related to cucumbers, pumpkins and squash.
These watermelon rind dosas are soft fluffy and delicious. There is a sweet and spicy version too, to these dosas. Sweet watermelon dosa is prepared by adding grated jaggery,rice and watermelon rind. The spicy version is prepared by adding dry red chillies, cumin and coriander seeds ground to a batter. It's a natural recipe for the summers. All you need to do is save the white portion(which is packed with several vitamins) and blend it with rice and few other ingredients. Juicy watermelon rinds offer a high dose of cirulline amino acid, which helps dilate blood vessels, improving blood circulation. These pancakes have the refreshing flavor of watermelon....and they make a tasty breakfast dish. The watermelon rind and coconut added to the batter renders a subtle sweetness to the dosa's and makes it soft and porous.
Ingredients :
1 cup of dosa rice
2 tblsp urad dal
1/2 cup grated coconut
1/4 cup beaten flattened rice / poha (soaked)
1 cup chopped watermelon rind cut to pieces
Salt to taste
Ghee for frying the dosas
Method :
1. Wash and soak the rice and dal in water for 3-4 hours.
2. Before grinding rice soak the poha for atleast 15-20 minutes. Blend the poha and grated coconut to a smooth paste. Transfer to a bowl and keep aside.
3. Now grind the watermelon rind to puree and add to the ground poha and coconut mixture.
4. Next grind the drained rice and dal with little water and salt to a smooth paste. Combine all together and give a pulse. The consistency of the batter should be little thick.
5. Leave the batter overnight for fermentation.
6. Heat a nonstick tawa on medium heat, pour a ladleful of the batter...do not spread. Pour little ghee on top. Cover with lid and let the dosa cook in it's own steam till done.
7. You won't even know that it has watermelon rind... So next time when you get watermelon, don't forget to save the rind of it. Enjoy making this unique dosa.
