This style fried chicken is the most famous, easy and most delicious chicken recipe marinated with curd, spicy masala mixture and floured or battered and then pan-fried or deep fried. This awesome and crispy pieces of fried chicken are best served as starter or appetizer.
Ingredients :
500-600 gms chicken (leg pieces preferably)
oil for frying
First Marinate
2 tblsp green chilli, ginger & garlic paste
1 lemon juice
1 tsp salt/ to taste
Second Marinate
1 tsp black pepper powder
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tblsp coriander powder
1/2 tsp cumin powder
1 tsp garam masala powder
1 tsp chaat masala
pinch of red orange food colour (optional)
2 tblsp curd
2 tblsp chickpea flour/Besan
1 tblsp cornflour
Method :
1. Clean the chicken pieces and make deep cuts for the marination to seep in.
2. Coat the chicken pieces with the first marinate and let it rest for 10-15 minutes.
3. Now add the second marinate spices and flour to the chicken pieces and leave to marinade, covered, in fridge for 1-2 hours.
4. Heat oil in a frying pan or wok on medium heat. Lay the marinated chicken in the oil and cook on medium heat for 5-7 minutes on each side, until cooked through and are golden brown.
5. Remove with a slotted spoon and drain on kitchen paper.
6. Serve with lemon wedges and salad.
