This chicken cooked with herbs and citrus tastes heaven. The longer they are marinated ...the better the taste, so you may marinate your chicken overnight too. As the dish is so succlent and taste amazing ... it's a favourite among kids too. The aroma while baking this dish will make everyone in the house drool. It's an easy, simple and perfect dish for weeknight dinners. You just have to rub the chicken legs with fresh garlic, pepper, lemon juice, herbs, olive oil and salt all over and bake to make this mouthwatering meal.
Ingredients :
6 chicken legs
4-5 garlic cloves crushed and minced
2 tblsp olive oil
1 large lemon juiced and zested
1.5 tsp pepper powder
1 tsp paprika
1.5 tsp red chilli flakes
1.5 tsp dried oregano
salt to taste
1 tsp chopped fresh parsley
lemon slices for garnishing
fresh Thyme for garnishing (optional)
Method :
1. Rinse and prick (fork) the chicken legs and pat dry. Rub each leg with minced garlic all over.
2. Pour olive oil, lemon juice and then add lemon zest, oregano, pepper, chilli flakes, paprika and salt. Toss everything very well. Marinate for 1-2 hours or overnight.
3. Preheat oven to 350 degree F ( 175 degree C )
4. Bake the marinated chicken legs for 20 minutes. Turn the pieces over and bake for another 20 minutes or until tender. Incase of sauce remaining after baking...boil and reduce it and pour the sauce over the chicken when you arrange them on a platter.
5. You may even Pan fry the chicken legs by heating 1 tsp olive oil/ butter in a nonstick pan/ skillet on medium or low flame until they are cooked through. You may also barbecue, or cook it under the grill.
6. Garnish with chopped fresh parsley, thyme and slices of lemon and serve warm.
7. Any veggies or a salad will go great with this chicken dish.
