Burnt garlic & mushroom fried rice is one of the popular aromatic & delicious variety of veg fried rice found in almost all chinese restaurants and stalls in India. The brunt garlic gives this rice preparation its unique flavour. Together with green chillies, crunchy vegetables, soya sauce & vinegar along with a garnish of spring onion greens & burnt garlic lends an invigorating touch to perfectly cooked Chinese rice.... to be mesmerized for long. You can also try out this simple fried rice with just mushrooms.... or you can add other veggies and scrambled egg. It is a complete meal on its own and you don't really need an accompaniment. If you like it spicy, you can add some Schezwan sauce, chilli sauce or chilli infused oil.... just a perfect supper for a cold rainy day as today's. Spices and ingredients can be varied according to one's choice. Rice cooked in advance works best for preparing any kind of fried rice. My kids love chinese food and this Burnt Garlic & Mushroom Fried Rice happens to be their favorite.
Ingredients :
1 & 1/2 - 2 cups of cooked Basmati rice
200 gms button mushrooms quartered
2 medium carrots chopped
6-7 french beans chopped (optional)
2 medium onions chopped
4-5 green chillies chopped
2 tblsp finely chopped or minced garlic
2 tblsp finely chopped or minced ginger
4 spring onions (shallot and scallions chopped fine)
1-2 tsp black pepper powder
1 tblsp soya sauce
1 tblsp vinegar
2 tblsp Schezwan sauce
6-7 cloves of garlic cut lenghtwise & fried to golden brown
salt to taste
2 tblsp oil
Method :
1. Heat oil in a wok, add the chopped garlic and saute & toss over medium heat till golden in colour. Be careful you don't burn them.
2. Now add the chopped ginger, green chillies & onions, shallots and continue cooking for more 2-3 minutes.
3. Now add the veggies, soya sauce & vinegar. Mix well. Cook till the moisture in the mushrooms dry out.
4. Add salt & pepper powder. Later add the Schezwan sauce and mix well.
5. Mix in the precooked rice, spring onion greens and toss gently and occasionally inbetween for 2 more minutes.
6. Serve hot garnished with spring onion greens and fried garlic. Enjoy!!
