I love prawns and this recipe is my favourite since childhood. Prawns stir Fry is one of my Mom’s best recipe. The aroma of cumin seeds and fresh curry leaves stir fried is something to die for. The recipe is made with simple and easily available ingredients.... this helps to retain the original flavour of the seafood which is otherwise usually dominated by the masala. The prawns are just perfectly cooked and can be relished with plain rice and dal / tomato saar or also as a side dish or can be served as starter. I have used tiger prawns to make this dish ... you may use any variety of prawns.
Ingredients :
1/2 kg tiger prawns or any other variety (shelled & deveined)
3 tsp oil
1 tsp cumin seeds
2 sprigs curry leaves
For marination :
1 tblsp red chilli powder
1 tblsp kashmiri chilli powder
1 tsp turmeric powder
1 whole lime juice
salt to taste
1 tsp ginger garlic paste (optional)
Method :
1. Marinate the cleaned prawns with chilli powders, turmeric, lime juice, salt and ginger garlic paste. Keep aside for atleast half an hour.
2. Heat oil in a kadai. Add in the cumin seeds and curry leaves. When they splutter add the marinated prawns and saute for 3-4 minutes.
3. Let cook with lid for more 2-3 minutes.
4. Now remove the lid and stir fry the prawns till all the moisture evaporates.
5. Be careful not to burn the prawns.
6. Your Prawns stir fry is ready to enjoy. Serve hot garnished with coriander leaves, curry leaves and slices of lime.
