GRILLED SPICED COTTAGE CHEESE IN INDIAN GRAVY/ PANEER TIKKA MASALA

Paneer tikka masala is a north Indian dish ... now popular all over the world, made from chunks of marinated cottage cheese in spices & grilled in a pan or tandoor. It is a vegetarian alternative to chicken tikka masala. It is a popular dish that is widely available in India and countries with an Indian diaspora. Chunks of paneer are marinated in spices and are then arranged on a stick with capsicums, onions and tomatoes. These sticks are grilled which lends a unique charred & smoky flavour and the dish is thereafter served hot, seasoned with lemon juice and chaat masala. It is sometimes accompanied by salad or mint chutney .... is usually served as appetizer. When paneer tikka is served with a rich onion tomato based gravy, it is called paneer tikka masala and when wrapped into an Indian bread or roti is known as paneer tikka roll. A variant of paneer tikka is also made as a kebab.
International fast food chains in India have also incorporated paneer tikka into their menus, such as Pizza Hut and Domino's which offer a paneer tikka topping on their pizzas, whereas Subway offers a paneer tikka sandwich and McDonald's has a paneer tikka wrap on its menu.
Paneer Tikka Masala is one of the most popular dish ordered in Indian restaurants and is also a favorite on special occasions and parties. Paneer is rich in proteins and calcium, making it a good source of protein especially for the vegetarians. Paneer Tikka Masala goes very well with most Indian Breads like tandoori roti, naan, paratha etc. as well as with veg pulao, Jeera rice or even plain rice.

Ingredients :

For marination :

200 gms Cottage cheese / Paneer cubes
1 small green capsicum deseeded & cubed
1 small onion cubed
2 tblsp thick curd
1 tsp ginger garlic paste
1 tsp red chilli powder
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp garam masala or tandoori masala powder
1/4 tsp kasoori methi
1/2 tsp chaat masala powder
1 tsp lime juice
1 tsp oil
salt to taste

For Gravy :

2 large onion chopped
2 tomatoes chopped
10 cashews
2 cloves/ lavang
1 small piece cinnamon/ dalchini
1 tsp ginger garlic paste
2 tsp kashmiri red chilli powder
1/4 tsp turmeric powder
1/2 tsp garam masala powder
1/2 tsp kasoori methi
2 tblsp fresh cream
handful of coriander leaves chopped fine.
salt to taste
2 tblsp oil/ butter
water as required

Method :

1. In a bowl combine all the spices, oil and curd and mix well using a whisk. Add the paneer, vegetables and toss gently till they are evenly coated on all sides.Marinate for half an hour.
2. Brush oil on a pan/ tawa. Place these marinated Paneer and Vegetable pieces on the hot pan. Brush some more oil on the top.
3. Take long tooth picks and thread these fried paneer and veggies alternatively and again place them over the hot pan/ griddle and let cook till golden brown on medium flame from all sides. On barbecue grill it will take around 9-10 minutes to cook.
4. In a kadai heat 1 tblsp oil/ butter .. add the cinnamon and cloves saute. Then add chopped onion & cashews and saute till the onion turns light brown, add ginger garlic paste and saute for a few seconds.
5. Now add the chopped tomatoes and cook till they are soft and mushy. Add all powdered spices and salt & cook for more 1 minute. Switch off the flame and let cool.
6. Once cooled grind the mixture into a smooth paste using little water.
7. Transfer the mixture into a kadai ... add a glass of water to adjust the gravy consistency, and bring the gravy to a boil over medium flame.
8. Add kasoori methi, stir and cook for a minute.
9. When the gravy turns thick add the grilled paneer and vegetables (tikkas) into the gravy.
10.Let cook on medium heat for more 2-3 minutes. Add fresh cream and mix well.
11.Garnish with fresh chopped coriander leaves and serve hot with paratha, naan or Jeera rice.
