SOFT JUICY & FLAVOURFUL CHESSY CHICKEN FRITTERS

If you love easy chicken recipes then this recipe is for you. They tend to disappear just as soon as they are out of the pan. They can be served as appetizers, patties in sandwiches or just as an evening snack. These fritters are so tender, juicy, flavorful and a healthier alternative to those store-bought fried nuggets. The secret to these juicy and moist fritters is mayonnaise. Mayonnaise makes these fritters melt in your mouth. During those tired weekends ... just pull the mix out, bake till warm and crisp and have dinner in say 10 to 15 minutes. They also make the perfect finger food for lunch served with some raw veggies on the side. These scrumptious chicken fritters are literally one of the easiest things you can ever make and taste so fantastic... crisp one the outside, soft and juicy inside. Just enjoy them as an appetizer with your favorite dipping sauce. Leftovers can be refrigerated and are perfect the next day for lunch boxes or small picnic sandwiches. These fritters will surely satisfy the taste buds of your guests and your loved ones.

Ingredients :

2 large chicken breasts
2 eggs
5 tblsp mayonnaise
5 tblsp cornflour
1 cup shredded mozzarella cheese
2-3 garlic cloves minced
1-2 tblsp finely chopped fresh dill/ shepu
1 tblsp black pepper powder
salt to taste
2 tblsp olive oil
Crisp lettuce leaves or cabbage leaves for serving

Method :

1. Wash & clean chicken breast and dry it with paper towels. Cut and dice the meat into small cubes and put them in a large deep mixing bowl.
2. Now add the eggs, mayonnaise, cornflour, shredded mozzarella cheese, minced garlic, finely chopped fresh dill, salt and pepper powder. Cornflour will help to make the mixture more dense, and fritters to keep their shape during roasting. Combine all well and refrigerate for 2-3 hours or more.
3. Heat a large non-stick pan over medium heat and add Olive oil. Using a tablespoon put the mixture into the hot pan, forming round patties of equal size. Try not to make them too thick, as they may not fry through.
4. Cover and cook for 5-6 minutes on one side, flip them with a spatula and continue to cook for 4-5 minutes over medium heat until golden brown and chicken is fully cooked through. Repeat with remaining fritters adding more oil as needed.
5. Remove the fritters on kitchen paper towel to drain off excess oil.
6. Serve hot over lettuce or cabbage leaves with any tasty dip of your choice. Enjoy!
