BRAHMI LEAVES CHUTNEY / MANGALOREAN STYLE TIMARE CHUTNEY

Brahmi popularly known as Ondelaga in kannada and Timare in Tulu is an unique herb which has been often regarded as a brain booster. It is said that Brahmi leaves when consumed early morning on empty stomach boosts memory power and intelligence level. It enhances the three aspects of memory which include long term memory, short term memory and the retaining capacity. It's extracts are used as the major ingredient for the treatment of Alzheimer’s disease and brain related problems like insomnia. It is a small succulent herb with numerous branches rooting at the nodes. It has a bitter and sweet taste and is known to impart a cooling energy.... which keeps the mind calm and free of anxiety & also promotes sound sleep. It also has antioxidants that are essential for healthy life. Regular consumption of Brahmi helps in strengthening your immune system. Brahmi has anti fungal and antibacterial properties. It also helps in soothing gastric ulcers and treating an irritable bowel syndrome. It is known for regulating the blood sugar levels in patients with diabetes.  Brahmi is considered as king among herbs in Ayurveda.

Ingredients :

For the chutney :
1 cup Brahmi leaves
1/2 cup fresh grated coconut
3-4 green chillies
1/2 inch piece ginger
small marble size tamarind
salt to taste

For tempering :

1 tsp oil
1 dry bedagi red chilli
1 sprig curry leaves
1/4 tsp mustard seeds

Method :

1. Clean and wash the brahmi leaves. Now in a blender grind the leaves, coconut, green chillies, ginger, tamarind and salt along with little water to a thick paste.
2. Add oil and mustard seeds in a pan. Once it starts spluttering, add curry leaves and broken dry chilli. When fried pour the tempering over the brahmi chutney.
3. Your power packed dish is ready to be relished as an accompaniment with plain rice, dosa or roti.
