KAJU PURI/ ROTLA

During Diwali dry fruit boxes are bound to come home in some form or other. The packaging gets more elaborate every year, but that doesn't change the fact that inside ... it's kaju, badam, walnut & pista. At my home walnuts are used for making chocolate & walnut fudges.... whereas kaju badam & pista are used to make few Indian desserts & rolls ....  last but not the least & everyones favourite Kaju badam puri/ rotla. The nuts can be combined according to your choice for eg. cashews with almonds or cashews with pistachio or cashews, almonds and pistachio together. Incase of Almonds you need to blanch them ... then peel the outer skin and later powderd. While kneading the dough add milk gradually as very little milk is required to knead the dough. You can roll the dough into a big circle and then use different cutters to cut and shape the rotla. You can also make small balls from the dough and roll into small circles. Later these rotlas are baked in the oven. But you can also  roast them in a nonstick pan on low heat. Place a cookie sheet on the heated pan and put the rotlas on it. Roast them on one side till golden. Flip and roast on the other side too. Remove and cool. The results will be the same.

Ingredients :

1 cup cashewnut powdered
1/2 cup powdered sugar
1/2 tsp cardamom powder
1/2 tsp strands of saffron soaked in 2 tblsp warm milk
few slivered almond and pistachio for garnishing

Method :

1. In a mixing bowl mix together cashewnut powder, powdered sugar & cardamom powder.
2. Now gradually pour in the saffron milk and prepare a soft dough. Apply a little ghee and smoothen the dough.
3. Take two sheets of butter paper and place this dough in between the sheets on a wooden board and using a rolling pin ... roll out the dough to form a quarter inch thick flat dough.                 
4. Now with the help of cookie cutter ... cut desired shape rotlas. sprinkle the slivered nuts and press a little.
5. Place them neatly on the baking tray lined with butter paper. Bake in a preheated oven at 170°C for 10-15 minutes or until done.
6. Remove them with the palette knife. They can be stored for a week or two outside and enjoyed.
7. Why eat adulterated sweets when you can make them at home easily. So ditch the fake silver warq and store bought sweets and do try this recipe at home.
