MY VERSION OF KFC STYLE FRIED CHICKEN DRUMSTICKS

KFC fried chickens are popular all over the world ... how they make such tasty fried chicken is definitely a trade secret which may not be leaked out. First you’ll need to start off by marinating the chicken in curd. This not only tenderizes the chicken, but allows the spice and coating mix to adhere better to the chicken pieces. Though my version is not the same as theirs .... but am happy with the fact that my son is a great fan of this fried chicken drumsticks.

Ingredients for Marination :

4-5 chicken drumsticks
2 tblsp curd
1 tsp ginger garlic paste
1 tsp black pepper powder
salt to taste

Ingredients for Coating :

2 tblsp refined flour/ maida
1 tblsp cornflour
1 tblsp bread crumbs
1 tsp red chilli powder
1 tsp pepper powder
1 tsp dried basil
1 tsp dried oregano
1 tsp dried garlic pd
1 tsp dried ginger pd
salt to taste

For final coating

1-2 egg white
1 tsp milk
salt to taste
2-3 tblsp pulsed oats and pulsed cornflakes

Method :

1. Wash and clean the chicken. Drain water well from chicken drumsticks and prick them with a fork.
2. Now marinate the chicken drumsticks with curd, ginger garlic paste, pepper powder and salt. Marinate for 2-3 hours.
3. In a bowl take all the ingredients in the flour coating mix. Combine well. Take the drumsticks one by one and dredge them in this seasoned flour.
4. Heat oil in a kadai and deep fry the chicken drumsticks on low flame until they are light golden in colour. Transfer them out on a paper towel-lined plate.
5. In a bowl whisk the egg white, milk and salt together and dip the fried drumstick in it and coat it with the pulsed oats and cornflake mix.
6. Again deep fry the chicken on low flame till the drumstick turn crisp golden in colour. If the flame is too high, it gets browned without getting cooked inside. Keep stirring often. Once it's done transfer to a paper towel-lined plate.
7. Serve this fried drumsticks with ketchup or any favorite dip of your choice.
