Falooda is a cold layered dessert that is very popular in the Indian subcontinent. Traditionally it is made from mixing rose syrup, vermicelli, sweet basil (sabza), jelly and often topped off with a scoop of ice-cream.
My todays recipe is another variation of falooda with fresh fruits. This recipe comes from my sister who has another variation to it...she spreads the layers/ assembels them in a big glass vessel and then serves it in individual serving bowls. Must say..it taste's yummy!
Ingredients :
2 cups chopped mixed fruits (apple, banana,pineapple, seedless grapes, pomegranate, orange, sweet lime, mango, chickoo etc.)
1/2 cup falooda vermicelli
strawberry/ Rasberry jelly pkt
2 tblsp sweet basil/ sabza
Rose syrup/ Rooh Afza
Vanilla/ Strawberry Ice-cream scoops
cherries, Grapes, tutti frutti, Nuts for garnishing
Method :
1. Heat 1 tsp ghee and roast the falooda vermicelli. To this add half a litre of milk and 3 tblsp sugar. cook until vermicelli is soft and cooked. keep it aside.
2. Soak the sabza in water for half an hour. Drain any excess water and set aside.
3. Prepare the Strawberry/Rasberry Jelly as per instruction on pack.
4. For serving take a tall glass. Firstly layer the bottom of the glass with jelly.
5. Add in the soaked sabza seeds.
6. Then top it with a layer of falooda sev.
7. Now add in a layer of mixed fruits.
8. Top it with a scoop of vanilla/ Strawberry ice-cream.
9. Garnish with nuts and whole cherry / black grape.
10.Serve immediately or chilled.
