PINEAPPLE SEMOLINA PUDDING / MANGALOREAN PINEAPPLE RAVA KESARI

Pineapple kesari is a version of Rava kesari. Other versions include banana, mango or coconut. Kesari can also be made with vermicelli instead of semolina, it is then called semiya kesari. It is also sometimes prepared with aval/ poha and is then called aval kesari.  Rava kesari is a typical South Indian dessert, especially popular in the states of Tamil Nadu and Karnataka. It is known as sheera in Marathi/Hindi, rava kesari in Telugu & Tamil, sooji halwa in the North & kesari bhat in Kannada. Rava kesari got famous in Tamil Nadu during the period of the Maratha Empire around the 18th century, and spread throughout India thereafter. Rava kesari is usually eaten for breakfast but can also be eaten as a dessert. It is very often served during wedding ceremonies and house warming ceremonies. It is also served as naivedyam or prasadam during festivals and puja rituals eg. Satyanarayana Puja where ripe bananas are used. Kesari comes from the word Kesar which means saffron, in some restuarants they replace saffron with food colour ...but my mom uses a pinch of turmeric powder, as she is against usage of food colours.


Ingredients :

1 cup semolina/ rava
1/2 cup ghee
1 cup sugar
1 cup pineapple chopped
3 cups water
a pinch of saffron dissolved in 3 tblsp warm milk
few cashews and raisins roasted in ghee
5-6 cardamom pods powdered

Method :

1. Dry roast the semolina on medium flame until you get nice aroma. Keep aside.
2. Heat 1-2 tblsp ghee in a kadai .. add chopped pineapple and saute for 2-3 minutes, add sugar & mix well. Now add water and give it a boil.
3. Heat the remaining ghee in another kadai and saute the roasted rava...roast for a few seconds and reduce the flame, now add the boiling water slowly over rava and keep stirring continuously.
4. Add cardamom powder, fried dry fruits and saffron milk. Give it a good stir.
5. Cover and cook till it thickens. Switch off the flame and keep covered for sometime.
6. Serve this delicious dessert hot or warm ... as I am sure everybody is going to definitely love it.
