My Sis used to make this whenever she made Appam. Being an egg lover, I just loved the concept of the runny egg yolk on top of the appam ....must say really just awesome. There are a variety of methods of including eggs in our daily diet. We can make pancakes, sandwiches or if you have Appam batter, you can try out this 'Motte Appam' or Egg Appam. Ingredients :
1 ladle full of Appam batter
1 Egg
salt and pepper to taste
Method :
1. Heat the Appachatti (special Appam nonstick pan) on medium low heat. Now pour a ladelfull of Appam batter in the center of the pan. Holding both the handles of the pan, swirl the pan in such a way that the batter spreads all round in a circle. The remaining batter will come to the center.
2. Cover and let cook till Appam is half done.
3. Crack open an Egg on top of the Appam ... take care not to break the Yolk.
4. Sprinkle salt and pepper on top .... cover and let the egg cook. Some like the eggs to be cooked well ... if desired you can keep the yolk runny.
5. Serve hot with any veg or non-veg gassi or coconut chutney.
6. You will definitely like this Motte Appam a lot. Enjoy!
