SCRAMBLED EGG / EGG BHURJI SANDWICH WITH CANTALOUPE / MUSKMELON MILKSHAKE

Cantaloupe or Kharbuja Milkshake is a complete refreshing shake that you must make when the melons are in season as they are the best summer coolant fruits available across India during summer season. They are easy to make and taste delicious....come summer and there are loads of muskmelon available in the markets. Cantaloupes are low calorie fruits with high dietary fiber which is great for digestive system. They have high water content which helps us to stay hydrated during summers. They are good source of Vitamin C and beta carotene which gets converted to Vitamin A .. which helps you have a healthy skin and good eyesight. Here I have served muskmelon milkshake with Egg bhurji sandwich...an excellent combo. You can also serve it as a welcome drink to your guests during these hot days.
Egg Bhurji sandwich is easy to make, delicious and is perfect for breakfast... can be made in minutes and is easy to pack for school tiffins too.

Ingredients :

For Egg Bhurji :

5 eggs
1 big onion chopped fine
3-4 green chillies chopped fine
handful of coriander leaves chopped fine
salt to taste
1 tblsp oil

For Muskmelon / Kharbuja Milkshake :

1 medium Muskmelon
2 tsp sugar / honey
1/2 cup crushed ice (optional)
1 cup milk
1 tsp cardamom powder / cinnamon powder

Method for Bhurji sandwich :

1. Heat oil in a pan and add the finely chopped onions and green chillies till light brown. Add salt and saute.
2. Crack open the eggs directly into the pan and stir vigorously to scramble the eggs. Cook for 1-2 minutes on medium heat.
3. Finally add in the finely chopped coriander leaves and allow to cool.
4. Spread butter on the bread slices. You may apply green chutney also if desired.
5. Stuff the egg bhurji between two slices and apply butter on the outside too.
6. You may grill the sandwich or toast them in a sandwich maker. Ready to be served with tomato sauce / ketchup.

Method for milkshake :

1. Clean the fruit with water. Cut into half. Remove the peel and the seeds.
2. Chop the flesh to small pieces and blend in a blender to a smooth paste.
3. Add sugar/ honey, cardamom powder, milk and crushed ice if desired.
4. Pulse for a few more seconds.
5. Serve it immediately, don't chill or keep in refrigerator as the taste may change and it may loose its freshness.
6. Add icecream if you are making for kids ... as it adds richness and creaminess to the milkshake.
7. You can replace milk with water/icecubes/soda ... this will give you juice. Instead of cardamom you may add black salt and mint leaves, to add to the freshness.
