Date fig & nut roll is a very healthy sweet. It is diabetic friendly... even they can satisfy their sweet craving without much worries. The addition of nuts & poppy seeds gives taste along with the benefits of proteins and minerals & makes it more nutritious. It is an energy bar that gives instant energy. It is good for growing up kids who need energy. It is also a good source of iron and minerals for pregnant and breastfeeding women. It is a perfect snack for most of our Indian religious fasts too. A guilt free sweet that you can enjoy on all festivals. In addition to the nuts mentioned in the recipe you can also use chironji, melon seeds, apricots or hazelnuts ... as per your choice. Enjoy this healthy rolls during festivals. Make and gift them to your dear ones and stay healthy and fit.
Ingredients :
250 gms seedless dates/ kajur
50-70 gms figs/ anjeer ( soaked for 20 min in warm water )
150 gms broken nuts ( cashews, almonds, walnuts, pistachio )
1/2 tsp cardamom powder
3 tblsp roasted poppy seeds/ khuskhus
2 tblsp ghee/ clarified butter
Method :
1. Chop the nuts into small pieces. Chop dates and figs finely and grind in a blender.
2. In a non-stick pan dry roast the poppyseeds on medium flame till they are aromatic. This will take a minute or two. Keep aside.
3. Heat 1 tblsp ghee in the same pan and roast the chopped nuts till golden and keep aside.
4. Now melt the remaining ghee and add the ground date & fig mixture. Saute on medium flame till it becomes soft and pulpy at the most 5-6 minutes.
5. Now add the ghee roasted nuts, dry roasted poppy seeds (reserving 1 tblsp aside ), cardamom powder and mix well. Switch off the flame and allow the mixture to cool.
6. Grease your hands with little ghee and roll the mixture into cylindrical shape.
7. Take an aluminium foil piece .... sprinkle pistachio slivers and reserved poppy seeds all over the foil. Roll the sweet date roll over it so as to get it coated evenly. Wrap the aluminium foil tightly and refrigerate for an hour.
8. Later remove the foil and cut it into slices.
9. Your healthy and tasty Date fig & nut roll is ready to eat.
