HERBY AND CHEESY CORN PANEER & CAPSICUM SANDWICH

This cheesy sandwich is an all time favorite at my home ... is a lip-smacking continental recipe that one can binge on a lazy Saturday or Sunday morning. The main ingredients used are some boiled corn and paneer along with finely chopped onion and capsicum tossed with spinach and coriander chutney. The simplest things in life give the most amount of pleasure and this simple & wholesome...Toasted Paneer capsicum & Corn Sandwich is a great example that proves this fact because it is so-very-easy to make and children simply love it! It is a perfect dish to start your day ... packed with proteins, enriched with vitamin A, D & E. The crispy and crunchy sandwich recipe with a soft and spicy filling can also make a great packed lunch or meal choice with soups and salads. The flavors and taste of corn paneer and cheese is too good and taste delicious ... you may add some more herbs or spice powders if you like.

Ingredients :

half cup boiled corn
2 medium onion chopped fine
2 medium capsicum chopped fine
200 gms panner diced into small cubes and cooked with little water and salt
2-3 processed cheese cubes grated / 1 cup mozzarella cheese
2-3 tblsp prepared green chutney
10 bread slices - white or brown or whole wheat or multi grain bread
Butter as required

For green chutney :

7-8 Spinach leaves blanched
1 bunch fresh coriander leaves
1 sprig curry leaves
7-8 green chillies
1 inch ginger
10 garlic cloves
1/2 tsp salt
1 tblsp chaat masala powder
juice from half a lime

Method :

1. In a blender grind together all the chutney ingredients and make your green chutney.
2. Next in a bowl add the boiled corn, paneer, chopped onion and capsicum, grated cheese, little salt and the green chutney. Mix well.
3. Spread butter evenly on the bread slices. Now spread the chutney on one of the slices.
4. Place the paneer corn & capsicum filling and close with the other slice of bread.
5. Apply butter on the outside of the sandwich and palce it on the hot pan. When nicely brown flip on the other side. Now apply butter on the other side and let it toast to golden brown.
6. Cut the sandwiches into half or diagonal shape and serve hot with green chutney and tomato ketchup.
